There is a wonderful hotel just North of Cape Town called Bushman’s Kloof Wilderness Reserve near the town of Clanwilliam. Everyday they serve this wonderful bread with their exquisite dinners.
Seed, Date & Raisin Loaf
250g whole wheat Flour
75g shelled sunflowers seeds
50g All bran Flakes
50g Seedless Raisins – finely chopped
50g Sesame Seeds
50g Corn flour
50g Dates - finely chopped
500ml Bulgarian Yoghurt
3 Tablespoons Sunflower or Olive Oil
3 Tablespoons Honey
1 teaspoon Bicarbonate of Soda
1 teaspoon Salt
2 Tablespoons Molasses
Mix all ingredients from (A)
together. In a separate bowl mix all ingredients form (B)
(slightly melt the honey and molasses). Add (A)
and mix well.
Place in a well greased loaf tin and sprinkle with Sunflower and Sesame seeds. Place in 180 degrres oven for 20 minutes then reduce heat to 150 degrees and bake for further one and a half hours.
Remove from oven and leave to cool in tin before turning out. Cut with serated knife. This will last for several days.
